Ingredients
- 4 boneless, skinless chicken breasts (GI: 0, Carbs: 0g)
- 1 cup whole wheat breadcrumbs (GI: 50, Carbs: 24g)
- 1/4 cup grated Parmesan cheese (GI: 0, Carbs: 1g)
- 1 teaspoon dried oregano (GI: 0, Carbs: 1g)
- 1 teaspoon dried basil (GI: 0, Carbs: 1g)
- 1/2 teaspoon garlic powder (GI: 0, Carbs: 0g)
- 1/2 teaspoon salt (GI: 0, Carbs: 0g)
- 1/4 teaspoon black pepper (GI: 0, Carbs: 0g)
- 1/4 cup unsweetened almond milk (GI: 0, Carbs: 0g)
- 1 cup sugar-free marinara sauce (GI: 40, Carbs: 8g)
- 4 slices part-skim mozzarella cheese (GI: 0, Carbs: 1g)
- Fresh basil leaves, for garnish
Cooking Instructions
- Preheat your oven to 400°F (200°C).
- In a shallow bowl, combine the breadcrumbs, Parmesan cheese, dried oregano, dried basil, garlic powder, salt, and black pepper.
- Dip each chicken breast into the unsweetened almond milk, allowing any excess to drip off, and then coat in the breadcrumb mixture, pressing gently to adhere.
- Place the breaded chicken breasts on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20 minutes or until the chicken is cooked through, flipping once halfway through.
- Remove the baking sheet from the oven and spread approximately 1/4 cup of sugar-free marinara sauce on top of each chicken breast.
- Top each chicken breast with a slice of mozzarella cheese.
- Return the baking sheet to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it rest for a few minutes before serving.
- Garnish with fresh basil leaves and serve with a side of steamed vegetables or a salad.
