Balsamic BBQ Chicken Stir Fry

Ingredients:
- 2 frozen chicken breasts, thinly sliced
- 2 cloves of garlic, minced
- 1/4 cup balsamic vinegar
- 1/4 cup BBQ sauce
- 1 cup white rice
- 1 cup frozen peppers and onions (or fresh if available)
- Salt and pepper to taste
- 2 tablespoons olive oil
- Green onions for garnish (optional)
Instructions:
- Cook the white rice according to package instructions.
- In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat.
- Add the minced garlic and sliced chicken breasts to the skillet. Season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Add the frozen peppers and onions to the skillet and continue to cook for another 3-4 minutes until the vegetables are heated through.
- In a small bowl, mix together the balsamic vinegar and BBQ sauce.
- Pour the balsamic BBQ sauce mixture over the chicken and vegetables in the skillet. Stir well to coat everything evenly. Cook for an additional 2-3 minutes to allow the flavors to meld together.
- Serve the Balsamic BBQ Chicken Stir Fry over the cooked white rice.
- Garnish with chopped green onions if desired.
