Banana Muffins

Ingredients:
- 2 ripe bananas, mashed
- 1/2 cup sugar
- 1/4 cup milk
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/3 cup vegetable oil
- 1 tsp vanilla extract
- 1 egg yolk
- 2 egg whites
Instructions:
- Preheat your oven to 350°F (180°C) and line a muffin tin with paper liners.
- In a bowl, whisk together the mashed bananas, sugar, milk, vegetable oil, vanilla extract, and egg yolk until well combined.
- In a separate bowl, mix the flour, baking powder, baking soda, and salt.
- Gently fold the dry ingredients into the banana mixture until just combined. Do not overmix.
- In another clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter.
- Spoon the batter into the muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy!
Carrot Banana Muffins
Ingredients:
- 1 ripe banana, mashed
- 1/4 cup sugar
- 1/4 cup milk
- 1/2 cup carrot pulp
- 1 1/4 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/3 cup vegetable oil
- 1 tsp vanilla extract
- 1 egg yolk
- 2 egg whites
Instructions:
- Preheat your oven to 350°F (180°C) and line a muffin tin with paper liners.
- In a bowl, combine the mashed banana, sugar, milk, carrot pulp, vegetable oil, vanilla extract, and egg yolk.
- In a separate bowl, mix the flour, baking powder, baking soda, and salt.
- Gently fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
- In a clean bowl, beat the egg whites until stiff peaks form. Carefully fold the egg whites into the batter.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool slightly in the tin before transferring them to a wire rack to cool completely. Enjoy these moist and flavorful muffins!
