Butter Chicken

A classic Indian dish with a rich, creamy tomato-based sauce, Butter Chicken is loved for its deliciously layered flavors.
Ingredients
- 500g boneless chicken, cut into bite-sized pieces
- 1 cup yogurt
- 1 tablespoon lemon juice
- 2 teaspoons garam masala
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder
- 1 teaspoon salt
- 4 tablespoons ghee (or butter)
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 can (400g) crushed tomatoes
- 1 cup heavy cream
- 2 tablespoons sugar (adjust to taste)
- Fresh cilantro for garnish
- Cooked basmati rice, for serving

Marinate the Chicken: In a bowl, combine yogurt, lemon juice, garam masala, turmeric, chili powder, and salt. Add the chicken pieces, coat well, and marinate for at least 30 minutes (or up to overnight in the fridge for deeper flavor).

Cook the Chicken: In a large skillet or pan, heat ghee over medium-high heat. Add the marinated chicken and cook until it's browned on all sides. Remove the chicken and set aside.

Make the Sauce: In the same pan, add a bit more ghee and sauté the chopped onions until they are translucent. Add the garlic and ginger, cooking for another minute until fragrant. Stir in the crushed tomatoes, sugar, and simmer for about 15 minutes.

Combine: Add the cooked chicken back into the pan. Stir in the heavy cream, and let everything simmer for another 10 minutes. Adjust seasoning and sweetness if necessary.

Serve: Garnish with fresh cilantro and serve hot with basmati rice.
