Backstory

Ingredients
- 1 cup unsalted butter (browned)
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 large egg
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup unsweetened cocoa powder
- 1 teaspoon instant coffee granules (or espresso powder)
- ¼ teaspoon ground cinnamon
- 1 cup dark chocolate chunks
- ½ cup white chocolate chips (for drizzle)
- Sea salt flakes (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a saucepan over medium heat, melt the butter. Continue cooking until it turns golden brown and develops a nutty aroma. Remove from heat and let it cool slightly.
- In a large bowl, combine the browned butter, granulated sugar, and brown sugar. Mix until well combined and smooth.
- Add the egg, egg yolk, and vanilla extract to the butter mixture. Beat well until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cocoa powder, instant coffee granules, and ground cinnamon.
- Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in the dark chocolate chunks.
- Using a cookie scoop or tablespoon, drop rounded dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers appear slightly soft. They will firm up as they cool.
- While the cookies are cooling, melt the white chocolate chips in a microwave-safe bowl, stirring until smooth. Drizzle over the cooled cookies and sprinkle with sea salt flakes.
