Caramel Stuffed Chocolate Cookies

These chocolate cookies are stuffed with gooey caramel that oozes out as you take a warm bite into them. They are perfect for satisfying any sweet tooth craving.
Ingredients
- 1 and 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 16-18 soft caramel candies, unwrapped
Instructions
- Preheat the oven to 350°F (177°C).
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In a separate large bowl, using an electric mixer, beat the butter until creamy. Add in the granulated sugar and the brown sugar and mix until smooth. Beat in the egg and vanilla extract.
- Slowly mix in the dry ingredients until just combined.
- Using a spoon, scoop out about 1 tablespoon of cookie dough and flatten it into a round disk.
- Place a caramel candy in the middle of the dough and wrap the dough around it, sealing it completely. Repeat with the remaining dough and caramels.
- Place the cookie balls on a baking sheet lined with parchment paper, leaving at least 2 inches between them.
- Bake the cookies at 350°F (177°C) for 10-12 minutes, or until the edges are set and the centers are still slightly soft.
- Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
