Chicken and Vegetable Casserole

Ingredients:
- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 cups carrots, sliced
- 2 cups green beans, trimmed and cut into 1-inch pieces
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup almond milk (or any non-dairy milk)
- 2 tablespoons olive oil
- 2 tablespoons all-purpose flour (or gluten-free flour for GF version)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Cooking spray
Instructions:
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the skillet and set aside.
- In the same skillet, add a bit more olive oil if needed. Sauté the onions, garlic, carrots, and green beans until slightly softened.
- Sprinkle flour over the vegetables and stir to combine.
- Gradually pour in the chicken broth and almond milk, stirring constantly to prevent lumps from forming. Cook until the sauce thickens.
- Season the sauce with dried thyme, dried rosemary, salt, and pepper.
- Add the cooked chicken back into the skillet and mix everything together.
- Transfer the mixture to a baking dish coated with cooking spray.
- Cover the casserole with foil and bake in the preheated oven for about 25-30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and the vegetables are tender.
