Ciabatta Toast with Basil Onion and Tomato

- 1 large ciabatta loaf
- 2 medium ripe tomatoes, diced
- 1 small red onion, thinly sliced
- 1 cup fresh basil leaves, chopped
- 3 tablespoons extra virgin olive oil
- 2 cloves garlic, minced
- Salt, to taste
- Pepper, to taste
- Balsamic glaze (optional, for drizzling)
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the ciabatta loaf in half, lengthwise, and place it cut side up on a baking sheet.
- In a mixing bowl, combine the diced tomatoes, sliced onion, chopped basil, minced garlic, olive oil, salt, and pepper. Mix well to combine.
- Spread the tomato and basil mixture generously over the cut sides of the ciabatta.
- Place the baking sheet in the oven and toast for about 10-12 minutes or until the ciabatta is golden and crispy.
- Once out of the oven, drizzle with balsamic glaze, if desired.
- Slice into pieces and serve warm.
