Classic Beef Filet Mignon with Red Wine Sauce

Ingredients:
- 2 Beef Filet Mignon steaks (6-8 oz each)
- Salt and pepper
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/4 cup shallots, finely chopped
- 1/2 cup beef broth
- 1/2 cup red wine
- Fresh thyme sprigs
- Fresh rosemary sprigs
Instructions:
- Preheat your oven to 400°F (200°C).
- Season the Beef Filet Mignon steaks generously with salt and pepper on both sides.
- Heat olive oil in an oven-safe skillet over high heat.
- Sear the steaks for 2-3 minutes on each side until they develop a nice crust.
- Transfer the skillet to the oven and cook for an additional 4-5 minutes for medium-rare doneness.
- Remove the skillet from the oven and transfer the steaks to a plate. Tent them with foil and let them rest while you prepare the sauce.
- In the same skillet, melt butter over medium heat. Add minced garlic and chopped shallots. Saute for 2-3 minutes until fragrant.
- Pour in the beef broth and red wine. Let it simmer and reduce by half, scraping up any browned bits from the bottom of the skillet.
- Add a few sprigs of fresh thyme and rosemary. Let the sauce simmer for a few more minutes.
- Plate the Beef Filet Mignon steaks and spoon the red wine sauce over the top.
- Serve hot and enjoy your classic Beef Filet Mignon!
