Classic Chunky Steak and Potato Soup

This hearty and comforting chunky steak and potato soup is perfect for a cozy meal on a chilly day. The savory beef broth combined with tender steak and soft potatoes will surely warm you up from the inside out.
Ingredients:
- 1 lb sirloin steak, cut into small strips
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, peeled and sliced
- 3 garlic cloves, minced
- 3 large potatoes, peeled and diced
- 8 cups beef broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:

In a large pot, heat the olive oil over medium heat. Add the steak strips and cook until browned on all sides. Remove the steak from the pot and set aside.

In the same pot, add the chopped onion and sliced carrots. Cook for about 5 minutes until the vegetables begin to soften.
