Classic Tiramisu with Homemade Ladyfingers

Backstory:
Tiramisu, which means "pick me up" in Italian, is a perfect way to end a meal. With layers of rich mascarpone and espresso-soaked ladyfingers, this dessert is an indulgent treat for any occasion.
Ingredients
For the Ladyfingers:
- 3 large eggs, separated
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/4 teaspoon baking powder
- Powdered sugar, for dusting
For the Tiramisu:
- 1 cup strong brewed espresso, cooled
- 3 tablespoons coffee liqueur (optional)
- 3 large egg yolks
- 1/2 cup granulated sugar
- 1 cup mascarpone cheese, softened
- 1 cup heavy cream
- Unsweetened cocoa powder, for dusting
Instructions
For the Ladyfingers:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, beat the egg yolks with granulated sugar and vanilla extract until pale and fluffy.
- In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the yolk mixture.
- Sift the flour and baking powder over the mixture and fold until just combined.
- Transfer the mixture to a piping bag and pipe 3-inch long strips onto the prepared baking sheet. Leave space between each strip.
- Dust with powdered sugar and bake for about 12-15 minutes, or until lightly golden. Allow to cool completely.
For the Tiramisu:
- In a shallow dish, combine the espresso and coffee liqueur (if using) and let it cool.
- In a bowl, whisk the egg yolks with the sugar until creamy. Add the mascarpone cheese and mix until smooth.
- In another bowl, whip the heavy cream until stiff peaks form and gently fold into the mascarpone mixture.
- Dip each ladyfinger briefly into the espresso mixture (do not soak) and layer them in a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers, then repeat with another layer of dipped ladyfingers and the remaining mascarpone.
- Cover and chill in the fridge for at least 4 hours or overnight for the best flavor.
- Before serving, dust the top with cocoa powder.
