Creamy Chicken and Vegetable Soup

This soup is easy to make and great for cold days. It's also a perfect way to use up leftover roast chicken.
Ingredients:
- 2 cups cooked and shredded chicken
- 4 cups chicken stock
- 2 cups mixed vegetables (carrots, peas, and corn)
- 1/2 medium onion, diced
- 2 garlic cloves, minced
- 3 tbsp. unsalted butter
- 3 tbsp. all-purpose flour
- 1 cup whole milk
- 1/2 tsp. dried thyme
- Salt and pepper to taste
Instructions:
- Melt the butter in a large pot over medium heat.
- Add the onions and garlic and cook until soft and fragrant.
- Add the flour and stir for a minute until it forms a paste.
- Gradually add the chicken broth, stirring constantly to avoid lumps.
- Add the vegetables, thyme, salt, and pepper to taste.
- Simmer for 15-20 minutes or until the vegetables are cooked.
- Add the shredded chicken and milk and stir until heated through.
- Enjoy with your favorite bread or crackers!
BLT Chicken Salad Sandwich
This sandwich is a delicious twist on a classic BLT. The chicken adds extra protein and makes it more satisfying.
Ingredients:
- 2 cups cooked and shredded chicken (rotisserie chicken works well)
- 1/4 cup mayonnaise
- 1 tsp. Dijon mustard
- 1 tbsp. freshly squeezed lemon juice
- Salt and pepper to taste
- 4 slices of bread
- 4 slices of cooked bacon
- 2 lettuce leaves
- 1 ripe tomato, sliced
Instructions:
- In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
- Add the shredded chicken and mix well.
- Toast the bread and spread the chicken salad on one slice.
- Top with bacon, lettuce, and tomato.
- Close the sandwich with the other slice of bread.
- Serve with your favorite chips or fries.
