Creamy Garlic Tuscan Chicken

Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Fresh basil, for garnish (optional)
Cooking Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium heat. Cook the chicken breasts for about 5-7 minutes on each side until golden brown and fully cooked. Remove from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the chicken broth, scraping up any bits from the bottom of the skillet. Bring to a simmer.
- Reduce the heat and add the heavy cream, sun-dried tomatoes, Italian seasoning, and Parmesan cheese. Stir until the cheese is melted and the sauce is creamy.
- Add the fresh spinach and cook for an additional 2-3 minutes until wilted.
- Return the chicken to the skillet and spoon the sauce over each piece. Cook for another 2 minutes to heat everything through.
- Garnish with fresh basil if desired, and serve warm.
