This Creamy Mushroom and Nut Chicken is a delicious and savory dish that's rich in flavor and healthy fats.
Ingredients:
- 4 Chicken Breasts (GI: 0)
- 2 tbsp Olive Oil (GI: 0)
- 8 oz Cremini or Button Mushrooms, sliced (GI: 0)
- 1 Onion, chopped (GI: 10)
- 3 Garlic Cloves, minced (GI: 0)
- 2 cups Almond Milk, unsweetened (GI: 0)
- 2 tbsp Almond Flour (GI: 0)
- 1/2 cup Mixed Nuts (such as almonds, cashews, and walnuts), coarsely chopped (GI: 10)
- 1 tbsp Fresh Thyme, chopped (GI: 0)
- Salt and Pepper, to taste
Cooking Instructions:
- Heat olive oil in a large skillet over medium heat.
- Add the chicken breasts and cook until golden brown, about 5 minutes on each side. Remove from the skillet and set aside.
- Add the sliced mushrooms to the same skillet and cook until they release their juices and are browned, about 5-7 minutes.
- Add the chopped onion and minced garlic to the skillet and cook until the onion is translucent, about 5 minutes.
- In a bowl, whisk together the almond milk and almond flour until smooth.
- Add the almond milk mixture to the skillet and stir well to combine.
- Add the mixed nuts and chopped thyme to the skillet and season with salt and pepper to taste.
- Add the chicken breasts back to the skillet and bring to a simmer.
- Cover and cook over low heat for about 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.
