Ingredients
- 4 large eggs
- 2 tablespoons cream cheese
- 1 tablespoon finely chopped fresh herbs (such as chives, dill, or parsley)
- Salt and pepper to taste
- 1 tablespoon butter
Instructions
- In a bowl, whisk the eggs until well beaten.
- Add the cream cheese to the eggs and whisk until the cream cheese is fully incorporated and the mixture is smooth.
- Stir in the finely chopped fresh herbs and season with salt and pepper.
- In a non-stick skillet, melt the butter over medium-low heat.
- Pour the egg mixture into the skillet and let it cook undisturbed for a minute or two until the edges start to set.
- Using a spatula, gently push the cooked edges towards the center, allowing the uncooked eggs to flow to the edges.
- Continue this process until the eggs are soft and lightly set, about 3-4 minutes. Remove from heat just before they reach your desired consistency, as they will continue to cook off the heat.
- Sprinkle with a bit more chopped fresh herbs for garnish and serve immediately.
