Date and Biscuit Pudding

This pudding is rich, comforting, and a lovely way to use stale biscuits. It’s a warm treat that celebrates the sweetness of dates.

- 200g stale biscuits, crushed
- 100g butter, melted
- 150g dates, pitted and chopped
- 150g sugar
- 2 large eggs
- 250ml milk (optional, but it adds creaminess)

- Preheat your oven to 180°C (350°F).
- In a bowl, mix the crushed biscuits and melted butter until well combined.
- Press the mixture into the base of a greased baking dish to form a crust.
- In another bowl, whisk together the eggs and sugar until creamy.
- Stir in the chopped dates and milk if using, and mix well.
- Pour the egg mixture over the biscuit base and bake for about 30-35 minutes until set.
- Allow to cool slightly before cutting into squares.
