Fluffy Buttermilk Pancakes

These fluffy buttermilk pancakes are a delightful treat that reminds me of cozy Sunday mornings at home with the family. Topped with syrup or fresh fruit, you simply can't go wrong!
Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup buttermilk (or milk with a splash of vinegar)
- 1 large egg
- 2 tablespoons melted butter (plus extra for cooking)
- 1 teaspoon vanilla extract (optional)
Instructions
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract (if using). Mix well.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix – a few lumps are perfectly fine!
- Heat a non-stick skillet or griddle over medium heat and add a little butter.
- Pour about ¼ cup of batter for each pancake onto the skillet. Cook until bubbles appear on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes or until golden brown.
- Keep pancakes warm in a low oven while you finish cooking the rest.
- Serve warm with your favorite toppings like maple syrup, fresh fruits, or whipped cream!
