In a large mixing bowl, separate the eggs into yolks and whites. Whisk the egg yolks with half of the sugar (50g) and vanilla extract until the mixture is pale and creamy.
In another bowl, whisk the egg whites until frothy. Gradually add the remaining sugar (50g) while whisking until soft peaks form. This will add the fluffiness to the cake.
Gently fold the flour and baking powder into the yolk mixture. Be careful not to overmix.
Gradually fold in the milk and melted butter into the yolk mixture until well combined.
