Fresh Milled Flour CheeseIt Style Crackers with Eggs

These homemade cheese crackers are not only cheesy and crunchy but also have the wholesome goodness of fresh milled flour. The added egg gives them a lovely richness, making them addictive snacks!
Ingredients
- 1 cup fresh milled flour (white or whole wheat)
- 1 cup sharp cheddar cheese, grated
- 1 teaspoon salt
- 1/2 teaspoon paprika (or more for spice)
- 4 tablespoons cold butter, cut into small pieces
- 1 large egg, beaten (for the dough and egg wash)
- 2-3 tablespoons cold water (as needed)
Instructions
- In a mixing bowl, combine the fresh milled flour, grated cheddar cheese, salt, and paprika. Stir until well mixed.
- Add the cold butter pieces to the flour mixture and, using your fingertips or a pastry cutter, work the butter into the flour until the mixture resembles coarse crumbs.
- Stir in the beaten egg. If the dough is too dry, gradually add cold water, one tablespoon at a time, until a cohesive dough forms.
- Once your dough is ready, wrap it in plastic wrap and refrigerate for at least 30 minutes to firm up.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick. Use a knife or pizza cutter to cut out cracker shapes, and place them on the prepared baking sheet.
- Brush the tops of the crackers with a little beaten egg for a nice golden finish.
- Bake for about 15-20 minutes, or until the edges are lightly golden brown.
- Allow them to cool on a wire rack before enjoying!
