This gluten-free recipe combines the savory flavors of miso with the nuttiness of peanuts, using tamari as a gluten-free alternative to soy sauce.
Ingredients:
- 2.5 pounds ground brisket chuck mix
- 1/2 cup gluten-free breadcrumbs
- 1/4 cup miso paste
- 1/4 cup chopped peanuts
- 1/4 cup tamari (gluten-free soy sauce)
- 2 tablespoons mirin
- 1 tablespoon sesame oil
- 2 eggs
- 2 cloves garlic, minced
- 1 onion, finely chopped
- Salt and pepper to taste
- Green onions for garnish
Instructions:
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mix together the ground brisket chuck mix, gluten-free breadcrumbs, miso paste, chopped peanuts, tamari, mirin, sesame oil, eggs, garlic, onion, salt, and pepper until well combined.
- Transfer the mixture into the greased loaf pan and smooth out the top.
- Bake in the preheated oven for about 1 hour or until the meatloaf is cooked through.
- Remove from the oven and let it rest for a few minutes before slicing.
- Garnish with chopped green onions before serving.
