Gouda Cheddar and Asiago Mac and Cheese Burger with Spicy Jalapeo Salsa

Picture this: a juicy grilled burger patty topped with a luscious, creamy mac and cheese blend, kissed with the richness of Gouda, cheddar, and Asiago, and finished off with a spicy jalapeño salsa for a kick of heat.
Ingredients

For the Mac and Cheese:
- 8 oz elbow macaroni
- 2 cups milk
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup shredded Gouda cheese
- 1 cup shredded cheddar cheese
- ½ cup grated Asiago cheese
- Salt and black pepper to taste
- A pinch of paprika (optional)

For the Burgers:
- 1 lb ground beef (80/20 for more flavor)
- Salt and black pepper to taste
- 4 hamburger buns, toasted

For the Spicy Jalapeño Salsa:
- 2 fresh jalapeños, finely chopped (remove seeds for less heat)
- 1 cup tomatoes, diced
- ¼ cup red onion, finely diced
- 2 tablespoons lime juice
- Salt and pepper to taste
- 2 tablespoons cilantro, chopped (optional)
Cooking Instructions

Prepare the Mac and Cheese:
- Cook the elbow macaroni according to package directions until al dente. Drain and set aside.
- In a saucepan over medium heat, melt the butter.
- Stir in the flour and cook for about 1-2 minutes until golden, creating a roux.
- Gradually whisk in the milk and continue to stir until the mixture thickens.
- Add the Gouda, cheddar, and Asiago cheeses, stirring until melted and creamy. Season with salt, pepper, and paprika. Mix in the cooked macaroni until well coated.

Grill the Burgers:
- Preheat the grill to medium-high heat.
- Season the ground beef with salt and black pepper, forming 4 equal-sized patties.
- Grill the patties for about 4-5 minutes on each side or until they reach your desired doneness.

Make the Spicy Jalapeño Salsa:
- In a bowl, combine the chopped jalapeños, tomatoes, red onion, lime juice, cilantro, salt, and pepper. Mix well and set aside.

- On each toasted bun, place a grilled beef patty.
