Ingredients
Instructions
- 1
Brown the butter: In a light-colored saucepan, melt the butter over medium heat. Swirl occasionally; it will foam, then the milk solids will brown and smell nutty — about 5–7 minutes. Immediately transfer to a heatproof bowl to stop cooking and let cool 10–15 minutes until warm (not hot). This gives a lovely caramel note, but you can skip browning if you're in a rush.
- 2
Whisk dry ingredients: In a bowl, whisk together the flour, baking soda, and salt. Set aside.
- 3
Cream sugars and butter: In a large bowl, combine the warmed browned butter with the granulated and brown sugars. Whisk until smooth and glossy — you're dissolving some sugar into the warm butter, which helps chewiness.
- 4
Add eggs and vanilla: Beat in the whole egg, then the yolk, followed by the vanilla, until well combined. The extra yolk adds richness and tenderness.
- 5
Combine with dry: Fold the dry ingredients into the wet mixture gently with a spatula until mostly combined — don't overmix or you'll toughen the dough.
- 6
Fold in chocolate (and nuts): Stir in the chopped chocolate or chips and nuts, if using. Scrape the bowl so chocolate is evenly distributed.
- 7
Chill the dough: Cover and chill the dough in the fridge for at least 30 minutes (up to 24 hours). Chilling firms the dough, concentrates flavor, and prevents excessive spreading — patience, dear, it's worth it.
- 8
Preheat oven and prepare pans: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
- 9
Portion the cookies: Use a 2-tablespoon scoop (or roughly 1.5 inches diameter) to place dough balls 2 inches apart on the baking sheet. For bigger cookies, use a 3-tablespoon scoop and increase bake time slightly.
- 10
Bake: Bake 10–12 minutes for 2-tablespoon cookies, until edges are golden brown and centers still look slightly underbaked — they will finish setting as they cool. Rotate pans halfway if your oven bakes unevenly.
- 11
Finish and cool: If you like, sprinkle a tiny pinch of flaky sea salt on each hot cookie. Let cookies cool on the pan 5 minutes, then transfer to a wire rack to cool completely.
- 12
Store: Keep in an airtight container at room temperature up to 4 days, or freeze dough balls for later baking.
