Grapefruit and Apple Custard Cups

These individual cups are a refreshing and classy way to enjoy the combination of creamy custard, sweet apples, and zesty grapefruit. Ideal for impressing your guests or simply pampering yourself.

For the custard:
- 2 cups whole milk
- 1/2 cup granulated sugar
- 4 large egg yolks
- 1 tablespoon vanilla extract
- 2 tablespoons cornstarch
- A pinch of salt

- 2 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced
- 1 tablespoon butter
- 2 tablespoons brown sugar
- 1/2 teaspoon ground cinnamon
- Zest of 1 orange

For the grapefruit:
- 1 large grapefruit, segmented and juice reserved
- 1 tablespoon honey (optional, depending on sweetness of grapefruit)
Cooking Instructions

Prepare the custard:
- In a saucepan, heat the milk over medium heat until just simmering. In a separate bowl, whisk together the sugar, egg yolks, cornstarch, and salt until smooth.
- Temper the egg mixture by slowly adding a bit of the hot milk while whisking continuously. Once mixed, pour the egg mixture back into the saucepan with the remaining milk.
- Cook over medium-low heat, stirring constantly, until thickened (about 5-7 minutes). Remove from heat and stir in the vanilla extract. Transfer to a bowl, cover, and refrigerate until cooled completely.

Sauté the apples:
- In a skillet, melt the butter over medium heat. Add the diced apples, brown sugar, cinnamon, and orange zest.
- Cook until the apples are tender and caramelized, about 8-10 minutes. Remove from heat and let cool slightly.

Assemble the cups:
- In serving cups or bowls, layer the sautéed apples at the bottom.
- Spoon the chilled custard on top of the apples.
- Top with the grapefruit segments, drizzling a bit of reserved grapefruit juice and honey (if using) over the top.
