Ground Turkey and Chickpea Curry

This dish is a delightful spin on classic curry, combining the earthiness of spices with the nuttiness of chickpeas. Perfect for a hearty meal that's sure to please!
Ingredients:
- 1 pound frozen Butterball ground turkey (thawed)
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 can (14 oz) coconut milk
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½ teaspoon ground cinnamon
- Salt and pepper, to taste
- 2 tablespoons olive oil
- Fresh cilantro, for garnish (optional)
- Cooked rice or naan, for serving
Cooking Instructions:
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and cook until it's translucent, about 5 minutes.
- Stir in the garlic and ginger, and sauté for an additional 1-2 minutes until fragrant.
- Add the ground turkey to the skillet, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 7-10 minutes.
- Sprinkle in the curry powder, cumin, paprika, cinnamon, salt, and pepper. Stir to coat the turkey in the spices and let it cook for another minute to release the flavors.
- Pour in the coconut milk and add the chickpeas. Stir everything together and bring to a simmer. Let it cook for 10-15 minutes, allowing the sauce to thicken slightly.
- Adjust seasoning to taste—add more salt or spices if needed.
- Serve hot over cooked rice or with naan, and garnish with fresh cilantro if desired.
