Herb and Garlic Mushroom Medley with Creamy Polenta

- 2 tablespoons unsalted butter (or olive oil for vegan)

- In a pot, bring the stock to a boil.
- Gradually whisk in the polenta, stirring constantly to prevent clumps.
- Reduce the heat to low and cook for 30-40 minutes, stirring occasionally, until thickened.
