Hogwarts Beef and Ale Stew

Instructions:
- In a large Dutch oven or heavy pot, heat olive oil over medium-high heat.
- Add beef, salt, and pepper and cook until browned on all sides.
- Remove the beef from the pot with a slotted spoon and set aside.
- Add the onions to the pot and cook until they are translucent, about 5 minutes.
- Add garlic and cook for an additional 1 minute until fragrant.
- Add the carrots and parsnips and stir to combine.
- Stir in the tomato paste until distributed throughout the vegetables.
- Pour in beef broth and ale.
- Add the bay leaf and thyme to the pot.
- Return the beef to the pot.
- Bring the stew to a simmer and cover with a lid.
- Lower the heat and gently simmer for 2 to 2.5 hours, until the beef is tender and falls apart easily.
- Check the seasoning and adjust salt and pepper to taste.
