Ingredients:
- 1 cup soya chunks (pre-soaked and drained)
- 1 cup cabbage, thinly sliced
- 1 bell pepper, sliced
- 1 red onion, sliced
- 2 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- Freshly ground black pepper
- 1 tablespoon oil
- Fresh coriander leaves for garnish
Instructions:
- Heat oil in a pan and add cumin seeds. Let them splutter.
- Add minced garlic and grated ginger. Saute for a minute until fragrant.
- Add sliced red onions and cook until they turn translucent.
- Stir in the soya chunks and cook for 5-7 minutes until they start to brown.
- Add sliced bell pepper and cabbage. Mix well.
- Sprinkle turmeric, coriander powder, red chili powder, salt, and black pepper. Stir to combine all the ingredients.
- Cook for another 5-7 minutes until the vegetables are tender but still retain some crunch.
- Taste and adjust the seasoning if needed.
- Garnish with fresh coriander leaves before serving.
