- 2 pounds baby potatoes or small potatoes of your choice
- 1 lemon (zest and juice)
- 2 tablespoons chopped fresh herbs (such as parsley, chives, or dill)
- Salt, to taste
- Black pepper, to taste
Instructions:
- Start by boiling the potatoes. Place them in a pot and cover with cold water. Add a generous pinch of salt to the water.
- Bring the water to a boil over high heat and cook the potatoes until they are fork-tender, typically around 15-20 minutes.
- While the potatoes are cooking, prepare the herbed lemon mixture. In a small bowl, combine the lemon zest, lemon juice, and chopped fresh herbs. Mix well.
- Once the potatoes are cooked, drain them in a colander and let them cool for a few minutes until they are cool enough to handle.
- Preheat your oven to 425°F (220°C) while the potatoes are cooling.
- Line a baking sheet with parchment paper.
- Take the cooled potatoes and gently press down on each one with the palm of your hand or the bottom of a glass to lightly crush them. Don't completely mash them; you want them to retain their shape.
- Place the smashed potatoes on the prepared baking sheet. Sprinkle them evenly with salt and black pepper to taste.
- Spoon the herbed lemon mixture over the potatoes, ensuring each potato gets coated with the flavorful mixture.
- Place the baking sheet in the preheated oven and bake for about 25-30 minutes or until the potatoes are golden and crispy on the edges.
- Once the potatoes are ready, remove them from the oven and let them cool for a minute or two.
- Transfer the Herbed Lemon Smashed Potatoes to a serving dish and garnish with additional chopped herbs, if desired.
- Serve the potatoes warm as a side dish or a delicious snack.
