A delightful treat where the creamy tanginess of cream cheese meets the bright notes of lemon and sweet blueberries, perfect for any occasion!
Ingredients:
- 1 box of cake mix (any flavor, lemon or vanilla works well)
- 8 oz cream cheese, softened
- 1 cup blueberries, fresh or frozen
- 1/2 cup lemon juice (freshly squeezed if possible)
- 1/2 cup powdered sugar (adjust for sweetness to taste)
- 1/4 cup melted butter (for the crust)
- Optional: zest of 1 lemon for extra flavor
- Optional: whipped cream for topping
Instructions:
-
Prepare the Base:
- In a mixing bowl, combine the cake mix with melted butter and mix until you have a crumbly dough.
- Press this mixture evenly into the bottom of a lined 9x9 inch baking dish to form the crust. Set aside.
-
Make the Cream Cheese Layer:
- In another bowl, beat the softened cream cheese until smooth and creamy.
- Gradually mix in the powdered sugar, then add the lemon juice (and lemon zest if using) until well combined.
-
Fold in the Blueberries:
- Gently fold the blueberries into the cream cheese mixture.
-
Layer and Set:
- Spread the blueberry cream cheese mixture over the crust in the baking dish, smoothing it out evenly.
- Refrigerate for at least 30 minutes until the mixture firms up (though you can dig in sooner if you're in a hurry!).
-
Serve:
- Once set, cut the bars into squares and serve chilled. You can garnish with whipped cream and extra blueberries if desired.
Flavor Profile:
These bars are a delightful balance of tangy, sweet, and creamy flavors. The creamy texture of the filling paired with the crumbly crust and fresh blueberries creates a refreshing taste experience, perfect for warm weather or as a light dessert.
