Lemon Garlic Shrimp and Orzo with Zucchini

This dish is a vibrant celebration of shrimp and zucchini, celebrated by a bright lemony garlic sauce that brings everything together beautifully.
Ingredients
- 8 oz tail-off deveined shrimp
- 1 cup orzo pasta
- 1 medium zucchini, diced
- 3 tablespoons olive oil, divided
- 4 cloves garlic, minced
- Juice and zest of 1 lemon
- 1/2 teaspoon red pepper flakes (adjust for spice preference)
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
- Grated Parmesan cheese, optional, for serving
Cooking Instructions
- In a large pot, bring salted water to a boil. Cook the orzo according to package instructions, usually about 8-10 minutes. Drain and set aside.
- In a large skillet over medium heat, heat 2 tablespoons of olive oil. Add minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet, season with salt and pepper, and cook for 3-4 minutes, or until the shrimp are pink and cooked through. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the remaining olive oil and diced zucchini. Sauté for 3-5 minutes until the zucchini is tender, then stir in lemon juice and zest.
- Return the cooked shrimp to the skillet, along with the cooked orzo. Toss everything together until well combined, allowing the flavors to meld for about 2 minutes.
- Taste and adjust seasoning if needed. Garnish with fresh parsley and serve with grated Parmesan cheese if desired.
