Low Glycemic Index 7 Layer Salad

Ingredients
- 4 cups mixed greens (spinach: 0, kale: 0, or lettuce: 10)
- 1 cup cherry tomatoes, halved (15)
- 1/2 cup cooked green peas (22)
- 4 hard boiled eggs (0)
- 4 slices cooked turkey bacon, crumbled (0)
- 1/4 cup shredded low-fat cheese (0)
- 1/4 cup Greek yogurt (11)
- 1 tbsp apple cider vinegar (0)
- 1/4 tsp Dijon mustard (0)
- 1 tsp honey (55)
- salt and black pepper, to taste
Instructions
- In a large bowl, arrange the mixed greens in an even layer.
- Layer the cherry tomatoes on top of the greens.
- Add the green peas on top of the tomatoes.
- Add the chopped hard boiled eggs on top of the peas.
- Add the crumbled turkey bacon on top of the eggs.
- Sprinkle the shredded cheese on top of the bacon.
For the dressing:
- In a small bowl, whisk together the Greek yogurt, apple cider vinegar, Dijon mustard, and honey until smooth. Season with salt and black pepper to taste.
- Drizzle the dressing over the top of the layered salad.
