Ingredients:
- 2 cups almond flour (GI: 0)
- 2 large eggs (GI: 0)
- 1/4 tsp salt
Instructions:
- Begin by whisking together the almond flour, eggs, and salt in a mixing bowl. Use a fork to combine them until a dough starts to form.
- Once it starts to clump together, use your hands to knead the dough into a ball.
- Once you have formed a dough ball, transfer it to a floured work surface, generously covered with almond flour to prevent sticking.
- Flatten the dough ball into a disk and then cover with cling wrap and let it rest in the fridge for 30 minutes.
- Once the dough has chilled and rested, roll it out thinly with a rolling pin until the desired thickness.
- Cut the pasta dough into desired shape using either a knife or a pasta maker.
