Backstory: Originating from North Africa and popular in Israel, shakshuka features eggs poached in a rich, spiced tomato sauce. It's a dish that brings warmth and depth, perfectly suited for a hearty breakfast or brunch.
Ingredients:
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 1 bell pepper (red or green), diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon sweet paprika
- ¼ teaspoon cayenne pepper (adjust to your spice preference)
- 1 can (14 oz) diced tomatoes (or 4 fresh tomatoes, chopped)
- Salt and freshly cracked pepper, to taste
- 4 large eggs
- ¼ cup Kalamata olives, pitted and halved
- ¼ cup crumbled feta cheese
- Fresh parsley or cilantro, roughly chopped (for garnish)
- Crusty bread (for dipping)
Instructions:
- Sauté the Base: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it's soft and translucent, about 5 minutes.
- Add the Bell Pepper and Garlic: Stir in the diced bell pepper and garlic, cooking for another 2-3 minutes until the pepper softens.
- Spice It Up: Sprinkle in the cumin, paprika, and cayenne pepper. Cook, stirring constantly for about 1 minute to release the spices' aromas.
- Tomato Time: Add the diced tomatoes (with their juices) to the skillet. Season with salt and freshly cracked pepper. Let this mixture simmer for about 10-12 minutes until it thickens slightly.
- Create Wells for the Eggs: Using a spoon, make small wells in the sauce, gently cracking an egg into each well. Cover the skillet with a lid and cook until the eggs are set to your liking (about 5-7 minutes for runny yolks).
- Finishing Touches: Once the eggs are cooked, sprinkle Kalamata olives and crumbled feta cheese over the top.
- Garnish and Serve: Remove from heat, garnish with fresh parsley or cilantro, and serve the shakshuka bowl hot with crusty bread on the side for dipping.
Flavor Profile:
This shakshuka bowl brings together the sweet and spicy notes of the sauce with the rich, creamy texture of the poached eggs. Each bite bursts with Mediterranean flavors, from the briny olives to the tangy feta and aromatic herbs.
