Microwave Strawberry Chocolate Mug Brownie (Dairy-, Nut-, and Egg-Free)

A gooey single-serve brownie with strawberries and melty vegan marshmallows — ready in under 2 minutes.

Ingredients

• 4 tbsp all-purpose flour
• 2 tbsp cocoa powder
• 3 tbsp sugar
• 1/4 tsp baking powder
• Pinch of salt
• 3 tbsp oat milk
• 1 tbsp neutral oil (vegetable or melted coconut oil)
• 1/4 tsp vanilla extract (optional)
• 3–4 small strawberries, hulled and chopped
• 4–6 vegan marshmallows, halved (for topping)
• A few sprinkles for decoration (optional)

Instructions

1. In a microwave-safe mug, whisk together flour, cocoa powder, sugar, baking powder, and salt.
2. Add oat milk, oil, and vanilla; stir until smooth and no dry streaks remain.
3. Fold in the chopped strawberries gently.
4. Smooth the top and arrange marshmallow halves on top of the batter.
5. Microwave on high for 60–75 seconds. Start at 60 seconds — the brownie should be set but slightly gooey. If still very wet, microwave 10–15 more seconds.
6. Let cool for 1 minute (mug will be hot). Sprinkle with sprinkles and enjoy warm.
