Oat Banana Chocolate Pancakes

These pancakes are wonderfully fluffy and filled with the goodness of oats and bananas, perfect for a delightful breakfast or brunch. Plus, they’re naturally sweetened with ripe bananas and stevia, so you can enjoy them guilt-free!
Ingredients:
- 1 cup rolled oats
- 1 ripe banana (the riper, the better!)
- 2 tablespoons unsweetened cocoa powder
- 1 tablespoon stevia (adjust to taste)
- 1 cup almond milk (or any milk of your choice)
- 1 teaspoon vanilla extract (optional, for extra flavor)
- Pinch of salt
- Coconut oil or cooking spray (for the pan)
Instructions:

Blend the Oats: In a blender, pulse the rolled oats until you get a fine flour consistency. This will be your oat flour!

Combine Ingredients: In a mixing bowl, combine the oat flour, cocoa powder, stevia, and a pinch of salt.

Mash the Banana: In a separate bowl, mash the ripe banana until smooth. Add the almond milk and vanilla extract (if using). Whisk until well combined.

Mix Everything: Slowly pour the wet mixture into the dry mixture. Stir everything together until you have a thick batter. If it’s too thick, you can add a splash more almond milk.

Cook the Pancakes: Heat a non-stick skillet over medium heat and add a little coconut oil or cooking spray. Pour in about 1/4 cup of batter for each pancake. Cook for 3-4 minutes on one side until bubbles appear on the surface, then flip and cook for an additional 2-3 minutes on the other side, until golden brown.

Serve: Serve warm with your favorite toppings — think fresh fruit, a drizzle of maple syrup (if you want a little sweetness boost), or just a sprinkle of cocoa powder!
