OnePan Roasted Pork and Vegetables

This recipe is super easy because everything goes in at the same time and cooks for the same amount of time!
Ingredients
- 1 lb pork tenderloin
- 1 lb baby potatoes
- 2 cups baby carrots
- 2 cups green beans
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 425F.
- Line a large baking sheet with parchment paper.
- In a small bowl, mix together minced garlic with olive oil, paprika, dried thyme, salt and pepper.
- Place pork tenderloin in the center of the baking sheet and rub with the garlic oil mixture.
- Toss baby potatoes and baby carrots in the same mixing bowl with the remaining garlic oil mixture. Place them around the tenderloin on the baking sheet.
- Roast for 15 minutes.
- After 15 minutes, add green beans on the sheet. Toss everything together and return it to the oven for another 10-15 minutes or until the pork is cooked through and the vegetables are tender.
- Let the pork rest for 5 minutes before slicing.
- Serve the vegetables and pork together and enjoy!
