Pasta Aglio e Olio with Shrimp

Ingredients
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 300g shrimp (peeled and deveined)
- 1/2 teaspoon red pepper flakes (adjust based on spice tolerance)
- Salt, to taste
- Fresh parsley, chopped (optional)
- Grated Parmesan cheese (optional, for serving)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente. Reserve about 1/2 cup of pasta water, then drain the pasta and set it aside.

Sauté the Garlic and Shrimp: In a large skillet over medium heat, add the olive oil. Once it's hot, add the thinly sliced garlic and sauté for about 1-2 minutes, until the garlic is golden but not burnt.

Add the Shrimp: Toss in the shrimp and season with salt. Cook for about 2-3 minutes, or until the shrimp are pink and opaque, stirring occasionally.

Add the Spice: Sprinkle in the red pepper flakes and stir for another 30 seconds, allowing their flavors to infuse.

Combine: Add the drained spaghetti to the skillet and toss to coat in the garlicky shrimp oil. If the pasta seems dry, add some reserved pasta water, a little at a time, until you reach your desired consistency.

Finish: Season with salt to taste. Add fresh parsley if desired and toss once more. Serve immediately, topped with grated Parmesan cheese if you like.
