Roasted Garlic Mashed Potatoes

Ingredients:
- 2 pounds of small "1 bite" potatoes
- 1 head of garlic
- 2 tablespoons olive oil
- 1/2 cup milk (or dairy-free alternative)
- 4 tablespoons unsalted butter (or dairy-free alternative)
- Salt and pepper, to taste
Instructions:
- Preheat your oven to 400°F (200°C).
- Cut off the top of the garlic head, exposing the cloves. Place the head of garlic on a sheet of foil, drizzle with olive oil, and wrap it tightly in the foil.
- Place the foil-wrapped garlic on a baking sheet and roast in the preheated oven for 40 minutes, or until the garlic cloves are soft and golden.
- In the meantime, wash the small potatoes thoroughly. Leave the skin on for added flavor and texture.
- Place the potatoes in a large pot and cover them with water. Add a generous amount of salt to the water.
- Bring the water to a boil over high heat and cook the potatoes until they are fork-tender, about 15-20 minutes.
- While the potatoes are cooking, remove the roasted garlic from the oven and allow it to cool slightly. Squeeze out the soft, roasted garlic cloves from their skins into a small bowl.
- Drain the cooked potatoes and return them to the pot. Add the roasted garlic cloves, milk, butter, salt, and pepper to the potatoes.
- Mash the potatoes with a potato masher or use a handheld mixer until smooth and creamy.
- Serve the Roasted Garlic Mashed Potatoes hot.
