Savory Zucchini and Onion StirFry

This stir-fry is a delightful combination of crispy vegetables tossed in a savory sauce. Perfect as a side dish or served over rice or noodles for a complete meal!
Ingredients:
- 2 medium zucchinis, sliced into half-moons
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons vegetable oil (or olive oil)
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional for extra umami)
- 1 teaspoon sesame oil
- 1 teaspoon ginger, minced (optional)
- Salt and pepper, to taste
- 2 teaspoons sesame seeds (for garnish)
- Chopped green onions (for garnish)
Cooking Instructions:
- Prepare Ingredients: Slice the zucchinis and onions, and mince the garlic and ginger (if using).
- Heat Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
- Sauté Vegetables: Add the sliced onions to the skillet and stir-fry for about 2-3 minutes until they begin to soften.
- Add Zucchini: Add the sliced zucchini to the skillet and continue to stir-fry for another 4-5 minutes, until the zucchini is slightly tender but still crisp.
- Incorporate Flavors: Stir in the minced garlic and ginger, and cook for an additional 1-2 minutes until fragrant.
- Add Sauce: Pour in the soy sauce and oyster sauce (if using). Stir well to combine, ensuring the zucchini and onion are evenly coated. Cook for another minute.
- Finish: Drizzle with sesame oil, and season with salt and pepper to taste. Toss everything together to combine.
- Serve: Remove from heat, sprinkle with sesame seeds and chopped green onions for garnish. Serve warm over rice or noodles, or as a side dish!
