Cook the Noodles: Bring a pot of water to a boil. Add the rice noodles and cook according to package instructions. Drain and set aside.
Prepare the Stir-Fry: In a large pan or wok, heat the vegetable oil over medium-high heat. Add the sliced onion, garlic, and ginger. Sauté for about 2 minutes until fragrant.
