Backstory:

- 1 leftover pie crust or pastry dough
- 1 tablespoon olive oil (for drizzling)

- 2 cups fresh spinach, roughly chopped
- 1 medium shallot, finely diced
- 1 garlic clove, minced
- 4 ounces goat cheese, crumbled
- 1/4 cup heavy cream
- 1 egg (for egg wash)
- Salt, to taste
- Freshly ground black pepper, to taste
- A pinch of freshly grated nutmeg (optional)
Cooking Instructions:

Preheat your oven to 400°F (200°C).

Prepare the filling:
- In a skillet, heat a drizzle of olive oil over medium heat. Add the diced shallot and sauté for about 2 minutes until softened.
- Stir in the minced garlic and cook for another 30 seconds until fragrant.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt, pepper, and nutmeg if using. Remove from heat and allow to cool slightly.

- Roll out your pastry dough into a rough circle (about 12 inches in diameter) on a parchment-lined baking sheet.

- Fold the edges of the pastry over the filling, pleating as you go, to form a rustic border. Brush the edges with beaten egg for a glossy finish.

- Drizzle a little olive oil over the exposed filling, and bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
