Ingredients:
- 2 cups rolled oats
- 1 cup almond flour
- 1/2 cup unsweetened applesauce
- 1/4 cup xylitol or erythritol
- 1/4 cup raisins
- 1/4 cup chopped walnuts
- 1/4 cup melted coconut oil
- 1 tbsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions:
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, mix together the rolled oats, almond flour, xylitol/erythritol, cinnamon, baking soda, and salt.
- In a separate bowl, whisk together the melted coconut oil, unsweetened applesauce and vanilla extract.
- Pour the liquid mixture into the dry mixture and mix until thoroughly combined.
- Fold in the raisins and chopped walnuts.
- Using a cookie scoop or spoon, scoop out the dough and form balls, then slightly flatten each ball.
- Place the flattened cookies onto the prepared baking sheet, spacing them about 2-3 inches apart.
- Bake for 12-15 minutes, or until lightly golden brown.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them onto a wire rack to cool completely.
