SugarFree Oatmeal Raisin Cookies

Ingredients:

• 2 cups rolled oats
• 1 cup almond flour
• 1/2 cup unsweetened applesauce
• 1/4 cup xylitol or erythritol
• 1/4 cup raisins
• 1/4 cup chopped walnuts
• 1/4 cup melted coconut oil
• 1 tbsp vanilla extract
• 1 tsp cinnamon
• 1/2 tsp baking soda
• 1/4 tsp salt

Instructions:

1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, mix together the rolled oats, almond flour, xylitol/erythritol, cinnamon, baking soda, and salt.
3. In a separate bowl, whisk together the melted coconut oil, unsweetened applesauce and vanilla extract.
4. Pour the liquid mixture into the dry mixture and mix until thoroughly combined.
5. Fold in the raisins and chopped walnuts.
6. Using a cookie scoop or spoon, scoop out the dough and form balls, then slightly flatten each ball.
7. Place the flattened cookies onto the prepared baking sheet, spacing them about 2-3 inches apart.
8. Bake for 12-15 minutes, or until lightly golden brown.
9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them onto a wire rack to cool completely.
