- 2 salmon fillets
- 1 can tinned tomatoes
- 1 cup frozen spinach
- 1/2 cup frozen mixed peppers
- 1/2 cup frozen sweet corn
- 1 cup frozen onions
- 2 teaspoons lazy garlic (or 2 cloves fresh garlic, minced)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
- Optional: a squeeze of lemon juice for added brightness
Instructions
- Preheat your oven to 375°F (190°C).
- In a large oven-safe pan, heat the olive oil over medium heat and add the frozen onions. Sauté until they begin to soften, about 3-5 minutes.
- Add the lazy garlic, mixed peppers, and sweet corn, stirring for another 2-3 minutes until everything is heated through.
- Pour in the tinned tomatoes, followed by the spinach, oregano, basil, salt, and pepper. Stir until well combined.
- Nestle the salmon fillets on top of the vegetable mixture. Drizzle with a bit more olive oil and season the salmon with salt and pepper.
- Transfer the pan to the preheated oven and bake for 20-25 minutes or until the salmon is cooked through and flakes easily with a fork.
- If desired, add a squeeze of lemon juice before serving for a refreshing touch!
