Almond Flour Chocolate Chip Cookies

Ingredients
- 2 cups almond flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup butter, softened
- 1 large egg
- 2 tsp vanilla extract
- 1/2 cup sugar-free chocolate chips
Directions
- Preheat oven to 350°F.
- In a mixing bowl, whisk together the almond flour, baking soda, and salt.
- In a separate bowl, cream together butter and egg until light and fluffy. Mix in vanilla extract.
- Add the dry ingredients to the wet ingredients and mix until well combined. Fold in chocolate chips.
- Using a cookie scoop or spoon, form dough into about 1-inch balls and flatten gently with your fingers.
- Place cookies on a lined baking sheet and bake for 12-15 minutes, or until golden brown.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
