Almond Flour Pancakes

These fluffy and delicious pancakes are low-carb and gluten-free. They make for a healthy and satisfying breakfast option.
Ingredients:
- 1 cup almond flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 1 tsp vanilla extract
- Butter or cooking spray, for cooking
Instructions:
- In a large mixing bowl, whisk together the almond flour, baking powder, and salt.
- In a separate bowl, whisk together the eggs, almond milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until well combined.
- Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or cooking spray to the skillet or griddle.
- Use a 1/4 cup measuring cup to scoop the pancake batter onto the skillet or griddle.
- Cook for 2-3 minutes on one side until bubbles appear on top, then flip and cook for an additional 1-2 minutes on the other side.
- Serve hot with your favorite toppings.
Almond Flour Banana Bread
This healthy and delicious banana bread is made with almond flour, and can be enjoyed as a breakfast or snack.
Ingredients:
- 3 ripe bananas, mashed
- 3 eggs
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 3 cups almond flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
Instructions:
- Preheat the oven to 350°F (180°C). Line a loaf pan with parchment paper.
- In a large mixing bowl, combine the mashed bananas, eggs, honey or maple syrup, and vanilla extract.
- Stir in the almond flour, baking soda, cinnamon, and salt until well combined.
- Pour the batter into the prepared loaf pan and spread it out evenly.
- Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Remove the bread from the oven and let it cool for at least 10 minutes before slicing and serving.
