Apple Cinnamon Oatmeal

Ingredients
- 1 cup quick-cooking oats
- 1 1/2 cups water
- 1/2 cup unsweetened apple juice
- 1/2 cup milk (any kind you prefer, dairy or non-dairy)
- 1/2 apple diced (I recommend using Honeycrisp or Granny Smith)
- 1 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Chopped nuts for serving (optional)
Directions
- In a medium-sized saucepan, combine the oats, water, apple juice, milk, and salt.
- Bring the mixture to a boil over medium-high heat and then reduce the heat to low.
- Simmer for 3-5 minutes or until the oats are cooked and the liquid has been absorbed. Stir the mixture occasionally to prevent sticking.
- Add the diced apple, brown sugar, cinnamon, and vanilla extract and stir until well combined.
- Continue cooking for another 2-3 minutes, or until the apples are tender and the oatmeal is heated through.
- Serve the oatmeal hot, topped with chopped nuts if desired.
