Artificial Banana Nut Muffins

These muffins are perfect for those who love the taste of banana nut muffins but would prefer to use artificial banana flavoring in place of real bananas.
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup vegetable oil
- 1/2 cup milk
- Artificial banana flavoring, to taste
- 2 eggs
- 1 cup chopped walnuts
(Note: You can find artificial banana flavoring at specialty baking supply stores, or online marketed as "banana emulsion" or "banana flavoring oil".)
Instructions:
- Preheat oven to 375°F. Grease a muffin tin or line with muffin cups.
- In a large mixing bowl, combine flour, granulated sugar, brown sugar, baking powder, and salt.
- In a separate mixing bowl, whisk together vegetable oil, milk, and artificial banana flavoring until well combined. Start with a small amount of flavoring and add more as needed to achieve the desired level of banana flavor. Too much artificial banana flavoring can result in an overpowering and unpleasant taste.
- Add eggs to the wet ingredients and whisk until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in chopped walnuts.
- Fill prepared muffin cups three-quarters full with batter.
- Bake for 18 to 20 minutes or until muffins are golden brown and a toothpick inserted into the center of a muffin comes out clean.
- Let muffins cool in the pan for 5 minutes before removing to a wire rack to cool completely.
