Baked Cod with Cherry Tomatoes and Spinach

- 2 cod fillets (about 6 oz each)
- 1 cup cherry tomatoes, halved

- 1 teaspoon lemon zest (optional)
- Cooked brown rice (for serving)
Cooking Instructions
- Preheat your oven to 400°F (200°C).
- In a baking dish, combine the halved cherry tomatoes and minced garlic. Drizzle with 1 tablespoon of olive oil, season with salt, pepper, and dried oregano. Toss to combine.
- Place the cod fillets on top of the tomato mixture. Drizzle with the remaining tablespoon of olive oil, and season with additional salt, pepper, and lemon zest (if using).
- Bake in the preheated oven for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork.
- While the cod bakes, sauté the fresh spinach in a pan over medium heat until just wilted, about 3-4 minutes.
- Serve the baked cod on a bed of wilted spinach, spoon the cherry tomato mixture over the top, and accompany with cooked brown rice.
