BBQ Cheesy Baked Potatoes with Broccoli

These loaded baked potatoes are a feast for the senses! Topped with roasted broccoli, tangy barbecue sauce, and ooey-gooey cheese, they're perfect for a comforting and hearty meal.
Ingredients
- 4 medium russet potatoes
- 2 cups broccoli florets
- 1 cup BBQ sauce (your favorite)
- 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional toppings: sour cream, fresh chives, or red onion
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the potatoes and prick them all over with a fork. Rub them with olive oil and sprinkle with salt. Place them directly on the oven rack or on a baking sheet.
- Bake the potatoes in the preheated oven for about 45-50 minutes, or until tender when pierced with a fork. While the potatoes are baking, prepare the broccoli.
- In a small pot, bring about 1 inch of water to a boil. Place the broccoli florets in a steamer basket over the boiling water, cover, and steam for about 5-7 minutes, until bright green and tender but still crunchy. Remove from heat and set aside.
- Once the potatoes are done baking, remove them from the oven and let them cool for a few minutes. Slice open the tops and gently fluff the insides with a fork.
- Drizzle a generous amount of BBQ sauce over the insides of each potato, followed by the steamed broccoli. Top with shredded cheese.
- Return the loaded potatoes to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Serve warm, garnished with any optional toppings like sour cream or fresh chives, if desired.
