- 1 pound ground beef
- 1 cup orzo pasta
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 can (14.5 ounces) diced tomatoes, drained
- 2 cups beef broth
- 2 teaspoons Italian seasoning
- Salt and pepper, to taste
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
- Fresh parsley or basil for garnish (optional)
Instructions
- In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
- Add the chopped onion, garlic, and bell pepper to the skillet. Sauté until the vegetables are fragrant and softened, about 5 minutes.
- Stir in the orzo, diced tomatoes, beef broth, Italian seasoning, salt, and pepper.
- Bring the mixture to a boil, then reduce to a simmer. Cover and cook until the orzo is tender and has absorbed most of the liquid, about 10-12 minutes, stirring occasionally.
- Once cooked, stir in the shredded cheese until melted and well combined.
- Garnish with fresh herbs, if desired, and serve warm.
